#wincest refers to Sam/Dean as adults in a romantic and/or sexual relationship.

#wincestiel is the same with the inclusion of adult Castiel.

#weeCHESTERS is Sam and Dean as children, with no implication of any sexual or romantic situation between them or anyone else with them.

#weeCEST is the brothers, underage, engaging in a sexual and/or romantic relationship between one another and/or someone else. (Extreme weecest refers to their very young age.)

Also: in fanfic, especially in AO3 tagging:

• a / between characters’ names means a romantic and/or sexual relationship;
• a & between characters’ names means a relationship that is neither romantic nor sexual. It’s for when you’re depicting a friendship or a familial relationship.

Yes, / was used on other fanfic sites differently, too, I’ve seen it used to list all the major characters, for example, but this is what it means on AO3 now. So please, don’t put a / between e.g. the names of a parent and child, unless you really mean it as incest. Don’t forget that & exists.
